Method of preparation :
Chop onions, garlic, dill and tomatoes - for example, 1 carrot, 1 onion and 3 cloves garlic, 5-10 cherry tomatoes or 1 large.
For vegetables for cooking you can stop at fresh cabbage, also Savoy, Brussels sprouts, new potatoes, peppers, zucchini, cauliflower, broccoli, asparagus, eggplant.
But do not overdo it with potatoes.
From beans you can use green beans or peas - 1-2 handfuls. Boil them separately.
Boil vegetable broth from products of your choice. For example: 1/4 onion, 2 celery stalks and 1 carrot. Let boil for half an hour.
For two servings of soup you need 1 liter of broth, put in it 1 teaspoon of salt (without tip).
Put a few pieces of bacon (2-3) in a saucepan, pour oil or olive oil (3-5 tablespoons) and fry the bacon lightly over medium heat.
Then add the chopped onion, carrot - in circles, garlic - in pieces, cherry tomatoes - in halves, 3 stalks of celery, dill (1/2 tuber).
Stir everything and let it fry on medium heat for 15-20 minutes, stirring constantly and not allowing the vegetables to burn.
It's time for the broth, pour it into the bowl with the other products. Use only the liquid, remove the vegetables that have been boiled in it.
The broth should cover the contents of the pot by 2-3 centimeters.
Add dry white wine - 1 cup of tea, for example.
Let everything cook for 10 minutes. During this time, prepare the vegetables that will be cooked.
Keep in mind that you should not overdo their heat treatment. Add them gradually according to the required cooking time.
Here is a little helper :
zucchini - 5 minutes;
fresh potatoes - 7 minutes;
broccoli and cauliflower - 7 minutes;
fresh cabbage - 10 minutes;
green beans and young peas - 15 minutes.
If you do not have fresh beans, you can use dried, pre-cook them separately and add them at the end of the soup.
Finally, add the fresh potatoes and zucchini (maybe at the same time), followed by a handful of fine pasta.
Leave the soup on the stove as long as necessary until the pasta is cooked.
5-6 minutes before removing the dish from the heat, add more bacon if desired. Mix everything.
When you have finished cooking, you can puree part of the soup with a blender and then reassemble with the rest.
An option is to add a spoonful of pesto sauce and garnish with chopped fresh parsley, basil, celery or another favorite green spice.
Enjoy your meal!
