Required products :
400 grams of mushrooms
400 grams of beans
4 cloves garlic
1 hot pepper
1 bay leaf
3 - 4 tablespoons olive oil

2 - 3 liters of water
Method of preparation :
Soak the beans in water beforehand (preferably overnight). Then boil it in 2 liters of water, add bay leaf and salt at the end of cooking.
Puree half of the beans with a blender and return to the broth.
Heat olive oil and fry the garlic cloves, sliced and hot pepper. Once they acquire a golden color, remove them from the olive oil, it has absorbed the aromas and spices are no longer needed.
Fry the cleaned, washed and sliced mushrooms in the aromatic fat until you get an appetizing brownish crust, add salt to taste.
Pour them into the broth with beans and bean puree. Let everything boil for 10 minutes.
Finally, add the chopped fresh parsley, finely chopped garlic and freshly ground black pepper. Turn off the stove, close the pan with a lid and wait 10 minutes.
You can now serve the soup with garlic croutons.
You can prepare the dish with white or red beans.
