Required products :

  • 1 tablespoon ground flaxseed
  • 250 grams of well-ripened bananas (if possible, let their skin turn black)
  • 1 teaspoon vanilla extract
  • 30 milliliters of sunflower oil
  • 120 milliliters of almond milk
  • 3/4 tablespoon apple cider vinegar
  • 2 tablespoons maple syrup
  • 1 tablespoon whose seeds
  • 1 teaspoon sea salt
  • 1 1/4 teaspoon baking powder
  • 100 grams of self-swelling flour
  • 145 grams of wholemeal flour
  • 75 grams of oatmeal
  • 75 grams of brown sugar

Method of preparation :

Preheat the oven to 180 degrees and place the paper in the muffin tin.

Mix the flaxseed with 3 tablespoons of sugar, then transfer it to a food processor and grind with a banana, vanilla, oil, almond milk, vinegar and maple syrup with an S-shaped knife.

Alternatively, you can crush the banana with a fork and combine all products with wire.

Mix the remaining products in a bowl, setting aside 1 teaspoon of oatmeal and sugar for sprinkling.

Add the banana mixture to the dry products and mix with a spatula, being careful not to over-stir, stop as soon as the ingredients are combined.

Spread the mixture between all the muffin tins (they should be almost full) and sprinkle with the separated sugar and oatmeal.

Bake for 25 minutes until golden.
