How To Cook Orange Cake With Walnuts And Mascarpone Cream - Recipe

Method of preparation

For the dough:
100 grams of walnuts
200 grams of butter
200 grams of honey
4 eggs
200 grams of flour
2 teaspoons baking powder
25 grams of cocoa powder

For the cream and for the decoration:
3 large oranges
125 grams butter
20 grams gelatin
2 whole eggs + 3 yolks
150 grams sugar
500 grams mascarpone
2 tablespoons orange liqueur
75 grams walnuts

Method of preparation :

Cut or crush the walnuts in bulk, bake them until golden in a pan without fat.
Preheat oven to 180 degrees.
Mix the butter with the honey, add the eggs one by one and mix well.
Sift the flour with the baking powder and cocoa, mix with the eggs, add the walnuts.
Grease a detachable baking tin and pour the resulting dough into it. Bake for 40 minutes.

During this time, wash the oranges well, dry them. Grate the bark of one finely, peel the rest and squeeze the juice from all three.
Cut the softened butter, mix it with the orange juice (about 150 milliliters), the eggs, including the yolks, and the sugar. Beat in a water bath (hot).

Dissolve the gelatin according to the instructions on the package.
Pass the hot cream through a sieve and beat. Then add gelatin, mascarpone, 1/2 of the grated orange peel and liqueur.

Let the finished loaf cool and cut it in half to get two loaves.
Spread one with half of the cream, flatten and put the second on it. And smear it with cream.
Sprinkle the surface with the remaining grated crust and refrigerate for at least 3 hours.
When removed, sprinkle with walnuts and serve.
