Required products :

  • 1 1/2 teaspoons beans soaked overnight
  • 30 grams of parmesan crust + more serving
  • 2 medium carrots, chopped in bulk
  • 2 stalks of celery, cut lengthwise
  • 1 head of garlic, cut in half + 2 cloves chopped
  • 6 sprigs of parsley
  • 1 sprig of rosemary
  • 2 bay leaves
  • 1/2 teaspoon hot pepper flakes
  • olive oil
  • 1 onion, chopped
  • 1 can of 400 grams of chopped tomatoes
  • 3/4 tea glass of dry white wine
  • 120 grams of sliced ​​lasagna crust, or flat spaghetti, broken into 2 cm pieces
  • 1/2 small head of chicory core, chopped

Method of preparation :

Put beans, parmesan peel, carrots, celery, garlic, parsley, garlic, bay leaf and hot pepper in boiling water. Reduce heat and simmer for about 1.5 hours until beans are ready. Season with salt and pepper when the beans are cooked and remove from the heat. Leave to stand for 30 minutes, then discard the vegetables, herbs and parmesan crusts using a slotted spoon.

Meanwhile, heat 3 tablespoons of olive oil and fry the garlic and onion in it until soft. Add the tomatoes and let the liquid boil for about 15 minutes, stirring occasionally. Add the wine and let it boil for 5 minutes.

Add the beans and the liquid in which you cooked it, stirring to combine the ingredients. Ten minutes later, add the pasta and add water, if necessary, to cook.

When the pasta is cooked (after about 10-15 minutes) add chopped chicory leaves, a minute later season with salt and pepper and remove from heat.

Serve by pouring a little olive oil over each portion and adding a few thin slices of parmesan and hot pepper if desired.
