Lemon peels combine all the flavors together in this delicious creamy paste. Serve with a salad of chopped fresh mozzarella and cherry tomatoes and garnish with fresh basil. Season with balsamic vinegar and olive oil.

Required products :

  • 220 grams of wholemeal pasta foam
  • 300-350 grams of asparagus, cut into pieces
  • 1 and 1/2 cup whole milk
  • 4 teaspoons mustard
  • 4 teaspoons flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 2 teaspoons extra virgin olive oil
  • 3 tablespoons garlic, chopped
  • 2 teaspoons fresh tarragon, ground (or 1/2 teaspoon dried)
  • 1 teaspoon grated lemon peel
  • 2 teaspoons lemon juice
  • 1/2 cup parmesan, grated

* A tea cup is used to measure the quantities.

Method of preparation :

Fill a large saucepan with water, put on the stove and bring to a boil. Add the pasta and cook for 3 minutes less than the instructions on the package. Add the asparagus and continue cooking until the pasta and asparagus are soft. Drain and return to the pan.

Meanwhile, beat the milk, mustard, flour, salt and pepper in a medium bowl until smooth.

Heat olive oil in a large saucepan over medium heat. Fry the garlic, stirring for about 1 minute or until lightly browned, then add it to the milk mixture. Put on the stove and stir constantly until the mixture thickens, then add the tarragon, lemon zest and lemon juice.

Pour the milk sauce into the pasta and asparagus pot and cook over medium heat, stirring, until the sauce is creamy and covers the pasta. Add 1/4 cup parmesan and stir. Remove from the heat and serve, dividing the pasta and asparagus into 4 bowls and garnish with the remaining 1/4 cup Parmesan cheese.
