Peel and clean the pineapple from the hard areas, cut the soft part into small cubes.
Put a bowl of water on the stove and once it boils, put some of the fruit pieces in it for 30 seconds, then remove with a slotted spoon.
Separate about 1/4 of the fruit, and grind the remaining amount with a blender to obtain a puree, which you pour
Beat the egg whites with the sugar using a wire whisk.
Beat 250 milliliters of chilled cream, combine thoroughly with egg whites.
Then add the pineapple puree and the separated fruit cubes.
Transfer to a round form, cover with plastic wrap and store in the freezer (for 8 hours).
Grate the chocolate and mix it with the rest of the cream. Melt over low heat, allow the mixture to cool to room temperature and refrigerate while the ice cream is in the freezer.
When you take the chocolate mass out of the fridge, beat with an egg wire.
Immerse the form with the dessert for a few seconds in boiling water and then turn over on a flat dish.
Remove the bowl and pour the ice cream with the chocolate cream.
Put the dessert back in the freezer for 2-3 hours.
