How To Cook Potato Muffins With Ham, Onion And Butter - Recipe

Necessary products / for 4 pieces / :

  • 800 grams of diced potatoes
  • 2 eggs
  • 2 tablespoons finely chopped onion
  • salt and freshly ground black pepper
  • 1 teaspoon ham, finely chopped
  • 2 tablespoons butter
  • 1 tablespoon fresh milk
  • 2 tablespoons green onions
  • 4 tablespoons breadcrumbs

Method of preparation :

 

  • Boil the potatoes in a saucepan with salted water until soft.
  • During this time, fry the onion for about 2-3 minutes and set aside.
  • In a large bowl, combine the boiled potatoes, eggs, ham, fried onions, butter, milk and chopped green onions.
  • Season with salt and pepper to taste. Stir and add a little more milk if necessary.
  • Preheat the oven to 200 degrees and cover the bottom of the pan with parchment paper.
  • Use a salad ring to shape the potato cupcakes - sprinkle with 1/2 tablespoon of breadcrumbs on the bottom, add 1/4 of the potato mixture, press with the back of a spoon and sprinkle again with 1/2 tablespoon of breadcrumbs. 
  • Remove the ring and repeat with the other products.
  • Bake the potato cupcakes for 10 minutes until golden brown.
  • Serve warm, garnished with sour cream, salad or other, to taste.
