Necessary products / for 4 pieces / :
- 800 grams of diced potatoes
- 2 eggs
- 2 tablespoons finely chopped onion
- salt and freshly ground black pepper
- 1 teaspoon ham, finely chopped
- 2 tablespoons butter
- 1 tablespoon fresh milk
- 2 tablespoons green onions
- 4 tablespoons breadcrumbs
Method of preparation :
- Boil the potatoes in a saucepan with salted water until soft.
- During this time, fry the onion for about 2-3 minutes and set aside.
- In a large bowl, combine the boiled potatoes, eggs, ham, fried onions, butter, milk and chopped green onions.
- Season with salt and pepper to taste. Stir and add a little more milk if necessary.
- Preheat the oven to 200 degrees and cover the bottom of the pan with parchment paper.
- Use a salad ring to shape the potato cupcakes - sprinkle with 1/2 tablespoon of breadcrumbs on the bottom, add 1/4 of the potato mixture, press with the back of a spoon and sprinkle again with 1/2 tablespoon of breadcrumbs.
- Remove the ring and repeat with the other products.
- Bake the potato cupcakes for 10 minutes until golden brown.
- Serve warm, garnished with sour cream, salad or other, to taste.
