Required products :

  • 1 and 1/2 teaspoons olive oil
  • 3 leek stalks, cleaned and finely chopped 
  • 2 cloves garlic, chopped
  • 1 and 1/2 teaspoons fresh thyme, chopped (or 1/2 teaspoon dried thyme)
  • 6 teaspoons chicken broth
  • 3 medium potatoes, peeled and cut into small cubes
  • 1/2 cup sour cream
  • salt and ground pepper to taste

Method of preparation :

Heat olive oil in a large saucepan over low heat. Add the leeks and cook, stirring, until soft or about 10 minutes. Add the garlic and thyme and cook for another 2 minutes. Pour the chicken broth and increase the heat to medium heat, bring to a boil, then reduce the heat and simmer uncovered for 10 minutes.

Strain the soup and puree with a blender or blender. Add some of the broth if necessary.

Return the puree together with the broth to the pan. Add the potatoes and simmer, covering with a lid, until the potatoes are soft or about 10-15 minutes. Remove the soup from the heat and mash the potatoes.

Add the sour cream, salt and pepper and put on low heat until warm but not boiling.

Serve the soup hot or cold.
