Required products :

2.5 - 3 liters of broth of your choice (chicken, vegetable or meat)

500 - 600 grams of potatoes

1 zucchini

3 - 4 tomatoes

1 onion

1 carrot

parsley

salt and pepper to taste

100 milliliters of fat of your choice

sour cream if desired

Method of preparation :

Peeled potatoes and zucchini cut into cubes. Finely chop the onion and carrot, scald the tomatoes and cut into pieces after peeling the skins.

Stew onions and carrots in hot oil for about 7 - 10 minutes.

Bring the broth to a boil and when this is done, pour the potatoes into it first. Five minutes later, add the zucchini and cook for 10 minutes. Then add the tomatoes and onions with the carrots, season with salt and pepper and let the soup cook for another 3-5 minutes. When removed from the heat, sprinkle with chopped parsley. You can serve with sour cream and freshly ground black pepper.
