Boil the potatoes until ready, salting the water in which they are cooked.
When they soften, pour cold water over them, cool and peel. Cut into chunks of the desired size - larger or smaller, as you like.
Fry the bacon (if you use veggie bacon, fry it in 1 tablespoon of oil). When it becomes crispy, drain and cut into pieces.
Mix the sugar, flour, water, vinegar, mustard and oil in a bowl, then heat in a saucepan until the sauce thickens. Drizzle the potatoes, add the bacon and onion, stir and season to taste.
