Required products :

  • 300 grams of pumpkin violin
  • 2 tablespoons olive oil
  • 6 eggs
  • 1/2 teaspoon cream
  • 1/2 cup fresh milk
  • 1/3 tea cup grated Parmesan + more to serve
  • 1/2 teaspoon butter
  • 1/2 tea cup of marjoram leaves
  • 1/2 cup grated cheddar
  • 100 grams of blue cheese, crushed

Method of preparation :

Preheat oven to 200 degrees.

Put the pumpkin (pre-cut into cubes) in a bowl and season with 1 tablespoon of olive oil, salt and pepper. Shake the bowl, transfer the seasoned pumpkin to a pan, bake for 15 minutes.

Meanwhile, mix the eggs, cream, milk, parmesan, salt and pepper in a bowl and beat well until the products are completely combined.

Heat a 22 cm diameter fireproof pan to medium heat. Put 1 tablespoon of olive oil and butter. Pour the egg mixture into the pan and leave for 5 minutes - do not stir! Then spread the pieces of pumpkin, marjoram, cheddar and blue cheese on the eggs and cook for another 15 minutes. Transfer to the oven and bake for 8-10 minutes until the frit acquires an appetizing golden crust.

Sprinkle with a little Parmesan and serve.
