How To Cook Pumpkin And Cottage Cheese Strudel - Recipe

Required products :
 
400 grams of finished dough
 
For the stuffing:
 
400 grams of pumpkin
400 grams of cottage cheese
80 grams of sugar
2 large eggs
1 teaspoon vanilla extract
100 milliliters of liquid cream with a fat content of 30%
1 teaspoon salt
100 grams of butter (to spread the dough)
1 tablespoon brown sugar
 
Method of preparation :
 
Grate the pumpkin, pre-peeled and cleaned of seeds. Sprinkle with salt and leave for 30 minutes.
 
Meanwhile, using a blender, beat the curd together with 80 grams of sugar and vanilla extract. Beat the cream with the eggs.
 
Drain the liquid from the pumpkin and mix with the cottage cheese and eggs. A homogeneous combination must be obtained.
 
Divide the dough into 10 - 14 parts and roll each of them thinly. Grease them with melted butter and distribute evenly from the filling. Form two rolls of 5-10 sheets of dough and place in a pan with a greased bottom (or covered with parchment). Coat their surface with the remaining melted butter and sprinkle with a little brown sugar.
 
Bake the strudel in a preheated 180 degree oven for about 40-50 minutes.
 
 
 
Before serving, you can sprinkle with powdered sugar, pour honey or maple syrup.
 
If desired, add 50 grams of raisins to the filling, which you have previously soaked in 2 tablespoons of cognac for 30 minutes.
