Required products :

  • 1/2 rabbit along with liver, heart and lungs
  • 150 grams of smoked breast
  • 2 - 3 onions
  • 2 tablespoons fat
  • 1 tablespoon flour
  • a few grains of black pepper
  • 1 bay leaf
  • 0.5 teaspoon paprika
  • 150 milliliters of red wine
  • parsley
  • left

Method of preparation :

Cut the rabbit and the cleaned and washed offal into small pieces. Heat the fat in a suitable pan and fry them in it. Cut the breast into small but thick pieces and the onion into large cubes. Add them to the reddened meat, reduce the heat, pour a little water into the dish, close with a lid and let everything cook until the meat softens. When this happens, add salt, crushed black peppercorns, bay leaf and paprika. Pour the wine, pour the flour, more salt if necessary and let the dish simmer for a few minutes. The sauce should be of medium density.

You can serve with rice or boiled potatoes, sprinkle with chopped parsley.
