Chocolate and coffee. In the column of perfect combinations, this one is definitely near the top of the list. The use of hazelnuts in the base gives this recipe the taste of nutella - so rich and elegant.

Necessary products:

nut base:

  • 1 cup hazelnuts
  • 1 cup almonds (or cashews, pecans or more hazelnuts)
  • 15 pitted dates
  • 2 tablespoons ground coffee
  • 4 tablespoons cocoa powder
  • pinch of sea salt

coffee and chocolate tray:

  • 2 and 1/2 cups raw cashews (soaked for at least 30 minutes in water)
  • 1/2 cup coconut syrup (or maple syrup)
  • 1/2 cup almond milk (raw hazelnut or cashew milk)
  • 1/2 cup melted coconut oil (or more hazelnut milk)
  • 4 soft pitted dates
  • 30 milliliters of espresso coffee
  • 1/2 teaspoon vanilla powder
  • 1/2 teaspoon sea salt

* A tea cup is used to measure the quantities.

Method of preparation:

Place the baking paper in a 20 cm round tray.

Grind the hazelnuts and almonds in a food processor. Add the dates, coffee, cocoa and sea salt and blend until sticky. Pour and press the dough into the pan on baking paper and set aside.

Blend cashews, coconut syrup, almond milk and coconut oil on high speed until smooth. Add the dates, espresso, cocoa, vanilla and salt and blend for a few more seconds. Pour the finished dough on the base and spread evenly. Leave the cake in the freezer for at least 4 hours.

The cake can be served frozen or thawed. Decorate as desired with melted chocolate, chopped hazelnuts and coffee beans.
