How To Cook Risotto With Bacon, Basil And Roasted Tomatoes - Recipe

Required products :

1 onion
100 grams of smoked bacon
180 grams of risotto rice
150 milliliters of dry white wine
150 grams of cherry tomatoes on a stalk
800 milliliters of chicken broth
3 tablespoons mascarpone
1 bunch basil
1 tablespoon olive oil

canned corn on request

Method of preparation :

Heat the olive oil in a saucepan and sauté the finely chopped onion over a low heat for about 2-3 minutes until soft. Then add the bacon, cut into small pieces and fry until golden. Pour the rice into the bowl, mix the products, increase the
temperature of the stove and pour the wine. Let everything cook for a few minutes.

Heat the broth and start pouring a little of it over the rice. When the liquid evaporates, then add more. Thus boil the rice, it takes about 20 minutes.

Put cherry tomatoes in a pan (as on the twig), sprinkle with olive oil, season with salt and ground black pepper to taste and bake in the oven for 5-6 minutes (they should soften a bit). Take them out on a plate and keep warm.

Add the mascarpone and a handful of finely chopped basil to the rice. Arrange on a plate and serve with roasted tomatoes.
