Delicious pork shank with spicy sausage and tender garnish - this awaits you at the end of this recipe.

Required products :

  • 3 kilograms of shank
  • 1 sausage chorizo
  • 1 tablespoon chopped parsley
  • 1 tablespoon chopped basil
  • 2 tablespoons olive oil
  • 1 tablespoon salt
  • 1 kg of sweet potatoes
  • stewed green beans for serving
  • lemon slices for serving
  • basil leaves for decoration

Method of preparation :

Preheat oven to 230 degrees. Dry the meat with a paper towel. Use a sharp knife to make incisions on it, 1 cm deep and with an interval of 2 cm between them. Put the pork in a large pan.

Cut the sausage very finely, mix it with parsley and chopped basil. Stir and put part of the mixture in each section. Sprinkle with a few drops of olive oil.

Put the pork in the oven and bake for 30 minutes, then reduce the temperature to 180 degrees. Leave it for another hour and a half, then add the sweet potatoes, washed and sliced. The dish should be baked for another 1 hour in the oven until the shank and potatoes are completely ready.

If the pork starts to burn during roasting, cover it with aluminum foil.

After removing from the oven, sprinkle the potatoes with a few basil leaves. Serve the meat with lemon slices and a garnish of sweet potatoes and green beans.
