Required products :

  • 750 grams of potato gnocchi
  • 1/3 tea cup olive oil
  • 16 sage leaves
  • 750 grams of pumpkin, cut into thin slices
  • 2 egg yolks
  • 600 milliliters of low-fat cream
  • 1/2 teaspoon nutmeg
  • 3/4 tea cup grated ripe mozzarella
  • 100 grams of blue cheese, crushed
  • roasted hazelnuts for serving

Method of preparation :

Preheat the oven to 200 degrees and grease a large pan.

Boil the gnocchi in hot water until they float to the surface and strain them and rinse with cold water.

Pour the finely chopped pumpkin in 1 tablespoon of olive oil. Add the gnocchi, egg yolks, cream, nutmeg, 1/2 cup mozzarella, half a sage leaf and 1/2 the blue cheese.

Mix all products and pour into the prepared pan.

Sprinkle with the remaining mozzarella and bake for 45-50 minutes until the pumpkin is cooked.

Meanwhile, fry the sage leaves in 1/4 teaspoon of olive oil until crispy - about 1 minute.

Drain on kitchen paper. Sprinkle them over the dish and sprinkle with the remaining blue cheese and roasted hazelnuts.
