How To Cook Roasted White Fish Fillet With Lentils And Vegetables - Recipe

Required products :

2 fillets of white fish
juice and peel of 1 lemon
1 onion
1 carrot
100 milliliters vegetable broth
salt and ground black pepper to taste

For the garnish:
200 grams lentils
2 carrots
1 onion
1 clove garlic
1 stalk leek
2 small celery roots
75 milliliters cooking cream
1 cube vegetable broth
butter at your discretion
salt and ground black pepper to taste


Method of preparation :

Preheat oven to 200 degrees.
Prepare the sauce for the fish. Finely chop onions and carrots, stew them over medium heat. Add the grated lemon peel, pour the vegetable broth and citrus juice. Reduce heat to low and simmer for about 10 minutes. At the end of cooking, season with salt and ground black pepper to taste.

Wash the fillet, dry it and place each piece on a separate sheet of parchment, then place in a pan. Drizzle the fish with the sauce and wrap tightly with paper (wrap like candy) so that the liquid does not run out. Bake for about 30 minutes in the oven.

It's time for the garnish. Peel, wash and chop the vegetables. Stew them over medium heat in oil for 5-7 minutes. Fill the lentils with cold water (in a ratio of 1 part lentils to 2 parts water) and bring to the boil. Add the cube of broth, stir, let it dissolve, reduce the temperature and simmer for about 10 minutes. Then add the lentils along with the broth to the vegetables and let everything simmer for another 10 minutes. Pour the cream and 10 minutes later add salt to taste. The garnish is ready.

Remove the fish from the oven, unroll the paper, being careful not to leak the sauce.
Put the garnish on a plate and the fish on it. Drizzle with sauce and serve.
