Preheat the oven to 200 degrees, cover a pan with a sheet of parchment and arrange the pumpkin cubes. Season with salt, olive oil and pepper. Bake for 30 minutes and cool.
Pour the quinoa into a bowl, add the finely chopped red onion, blueberries, raisins, parsley and cheese. Season the mixture with salt, pepper and olive oil to taste.
Season with lemon juice and add the roasted pumpkin cubes. Serve and eat with pleasure.
