  • 250 grams of diced pumpkin
  • 2 tablespoons olive oil
  • salt, pepper
  • 2 teaspoons boiled quinoa
  • 1 red onion, finely chopped
  • 50 grams of dried cranberries
  • 1/2 cup raisins, light
  • a few sprigs of chopped fresh parsley
  • 50 grams of sliced ​​cheese
  • lemon juice

 

Method of preparation:

 

Preheat the oven to 200 degrees, cover a pan with a sheet of parchment and arrange the pumpkin cubes. Season with salt, olive oil and pepper. Bake for 30 minutes and cool.
