Scrambled eggs are a typical choice for a quick dinner - they are cheap, filling, do not require great culinary skills. But that doesn't mean they can't be delicious.

Here we present an unconventional recipe for scrambled eggs with spinach, feta cheese and cherry tomatoes. The ingredients are for 1 serving , and the preparation will take you only 15 minutes .

Necessary products:

  • 3 eggs, broken
  • 110 grams of spinach
  • 60 grams of feta cheese, crushed into small lumps
  • 2 tablespoons coconut oil for cooking (you can also use olive oil)
  • 100 grams of halved cherry tomatoes
  • 2 green onion stalks, finely chopped

Method of preparation:

Put the coconut oil in a pan and heat it over medium heat. Add the tomatoes and green onions and fry for 3-4 minutes until soft.

Add the spinach and the crushed feta cheese, stir and leave for 1-2 minutes. (If you prefer, you can not put the spinach in the pan, but serve it fresh with the prepared eggs).

Add the beaten eggs and sprinkle with salt and pepper to taste. Stir constantly until the mixture thickens.

Serve the finished eggs while warm. Enjoy your meal!
