Required products (for 6 pieces ):

  • 250 grams of wheat flour
  • 10 grams of sugar
  • 15 milliliters of olive oil
  • 120 milliliters of warm water
  • 1/2 teaspoon salt
  • 3 grams of dry yeast
  • 1 teaspoon sesame seeds
  • 200 milliliters of sugar / honey syrup

 

Method of preparation :

Sift 2/3 of the flour into a bowl, pour the salt and dry yeast into it. Gradually start pouring warm water, kneading the dough, stirring first with a spoon or spatula, and then continue with your hands.

Once a soft dough is obtained, add olive oil, pouring gradually. When the dough completely absorbs one part, then pour the next.

Then, again in stages, add the remaining flour. The dough should be thick but not dry. If you decide, do not use the entire amount of flour, which is listed above. Conversely, if the specified dose is insufficient, add more.

Cover the dough with a wet towel and leave it for half an hour.

Meanwhile, roast the sesame seeds until golden. You can use them raw, but their taste is richer when baked.

Make 200 milliliters of sugar or honey syrup (maybe just plain water).

Divide the dough into 6 parts, shape into small sausages and leave for 10-15 minutes.

Then smear each with olive oil, cover with a damp cloth and wait another 10-15 minutes.

When this time has elapsed, roll each part of the dough with your palms like a rope 80-100 cm long. Fold in half and twist, slightly stretching the "rope". Then connect the two ends to form a ring.

When you have made six pretzels this way, dip each in syrup or water, roll in the roasted sesame seeds and arrange in a pan. Place for a quarter of an hour in the oven preheated to 35 degrees. Then remove, wait 15 minutes, during which increase the temperature to 250. Return the pretzels to the oven and bake them until golden (it takes about 7-10 minutes).
