Required products :

  • 2 tablespoons finely chopped green onions
  • 2 tablespoons soy sauce
  • 1 1/2 tablespoons sesame oil
  • 1 tablespoon mirin (or sherry wine)
  • 2 teaspoons fresh ginger, peeled and finely chopped
  • 1 teaspoon crushed garlic
  • 1 teaspoon of syrup
  • 220 grams of raw shrimp

for the sauce:

  • 8 dried shiitake mushrooms (about 30 grams)
  • 220 grams of tofu, cut into cubes
  • 4 eggs
  • 1/2 teaspoon green onions, cut into thin slices
  • 1/3 tea cup chicken broth
  • 2 teaspoons soy sauce
  • 2 teaspoons miso paste (white)

Method of preparation :

Prepare the shrimp marinade. Put 2 tablespoons of green onions, soy sauce, sesame oil, myrrh, ginger, garlic and hot sauce in a bowl. Save 6 whole shrimp and chop the rest. Dip the whole in the sauce and leave for 30 minutes.

Pour hot water over the mushrooms and soak for 30 minutes, then squeeze the liquid and cut them.

Bring water to a boil in a kettle or use an electric kettle to heat it.

Puree the tofu, add the eggs, soy sauce, broth, onion and miso paste. Pour the chopped shrimp and make a few pulsations of the robot to combine the products while still feeling the shrimp pieces.

Pour the mixture into a tray measuring 18 by 30 centimeters and arrange the whole shrimp on top. Pour enough water to reach the amount in the middle of the pan. Cover with foil and bake at 160 degrees for about 30-35 minutes.
