How To Cook Spring Pie With Spinach, Eggs And Puff Pastry - Recipe

Required products :

  • 25 grams of butter
  • 2 tablespoons flour
  • 6 eggs
  • 200 grams of spinach
  • 110 grams of arugula
  • 2 tablespoons olive oil
  • 1 onion
  • 500 grams of ricotta
  • 50 grams of parmesan
  • 110 grams of provolone cheese
  • salt and pepper
  • 500 grams of puff pastry

Method of preparation :

Grease a 28 cm diameter pan with oil and sprinkle with flour.

Boil 5 eggs for 10 minutes, once they are ready put them in cold water and leave to cool.

Meanwhile, wash the spinach and arugula and drain the excess water.

Heat a large skillet, place the greens and cover with a lid. Stew for 4-5 minutes until the liquid evaporates. Wait for them to cool enough and use your hands to squeeze them out of the water contained in them. Cut the leaves into large pieces.

Finely chop the onion and fry it in olive oil until soft. Set it aside to cool.

Mix onion with spinach and arugula, add grated parmesan and ricotta.

Cut the provolone cheese into cubes in the mixture, season with salt and pepper and stir again.

Divide the dough into two parts. Roll one to a thickness of 5 millimeters and wrap on the inside of the dish - on the bottom and on the walls.

Fill with half the spinach mixture. Peel and cut the eggs into quarters. Arrange them on the spinach mixture and cover with the rest.

Roll out the dough and cover the pie with it. Seal the edges of the dough well with your fingers. Beat the remaining 1 egg and spread the pie well.

Make a small cross-shaped incision in the center of the dough so that excess steam can escape during baking.

Bake for 35-40 minutes in a preheated 200 degree oven. When the dough turns golden brown, the pie is ready.

Allow to cool before serving.
