Required products :

  • 2 tablespoons olive oil + more to serve
  • 200 grams of chorizo ​​sausage
  • 1 onion
  • 1 tablespoon smoked paprika
  • 2 cans of chickpeas (from 400 grams each)
  • 1 can of chopped tomatoes (800 grams)
  • 1 whole chicken, cut into 8 portions
  • 2 teaspoons chicken broth
  • salt and pepper
  • 2 tablespoons sherry vinegar

Method of preparation :

To prepare the recipe, you will only need a pressure cooker if you want your dish to be cooked quickly, but it does not prevent you from preparing the stew in an ordinary pot.

Cut the onion into crescents and fry it in olive oil until it becomes translucent and soft. Add the diced chorizo ​​and fry until lightly browned at the edges, about 3 minutes. Add the smoked paprika, chickpeas, tomatoes and chicken. Pour the broth and season with salt and pepper.

Close the pan with the lid and bring to a boil under pressure. Cook for 15 minutes. Allow the pressure to drop naturally or under the running tap (if using an electrical appliance, use the quick-release valve, if any) and open. Return the pan to the hob and continue to cook on high heat, stirring occasionally and cooking until you reach the desired density - about 5 minutes.

Drizzle with vinegar, sprinkle with parsley and pour extra virgin olive oil when serving.
