Wash and clean the spinach and sorrel, remove the rough hard parts. Cut the rind of the lemon, trying to get a long thin strip, which is then cut into straws lengthwise.
Melt the butter in a large pan, add the crushed garlic and citrus pieces. Cook for 1 minute, then add the sorrel and spinach leaves. While suffocating, turn on both sides with a pinch. It takes about 3 minutes to soften. Once this is done, season and serve immediately.
