Required products :

several large tomatoes
1 teaspoon chicken broth
1/2 teaspoon water
1 teaspoon rice
1 teaspoon boiled black beans
1 chopped red sweet pepper
1/2 chopped green sweet pepper
1/2 chopped onion

For the sauce:

3 tablespoons olive oil
3 tablespoons orange juice
1 tablespoon red wine vinegar
2 teaspoons chopped coriander leaves
1/2 teaspoon cumin
salt to taste

Method of preparation :

Mix the water and broth in a suitable container, place on the stove and bring the liquid to a boil. When this happens, add the rice, reduce the temperature to a minimum, close the container with a lid and let the grains simmer until soft (about 20 minutes). Then transfer the rice to a large bowl and allow to cool slightly.

Add pre-cooked beans, chopped peppers, onions.

Make the sauce by mixing olive oil with orange juice and vinegar, add the spices and stir. Pour it into the bowl with the filling and close with a lid. Refrigerate for at least 4 hours to mix the flavors.

Cut the top of the tomatoes, carve the inside and fill them with the fragrant saturating combination you have prepared.
