In a saucepan, heat the fat and fry the onions, finely chopped tomatoes and garlic cloves. Add salt, pepper, paprika and sugar. Add the peppers, aubergines and pickles.
Stir the dish and add the meat. Pour a tea cup of water and cook over low heat until the chicken is ready. Put the rice in another bowl, pour the water and boil it.
Season with butter and salt to taste. Arrange the summer dish on a plate, garnish with rice and serve the dish garnished with a sprig of fresh parsley.
