Required products :

1 kg of tomatoes

2 tablespoons tomato paste

3 peppers (yellow and orange)

parsley

1/2 liter of meat broth

100 grams of carrots

2 red onions

100 milliliters of cream

50 milliliters of olive oil

a pinch of sugar

6 cloves garlic

salt and pepper to taste

 

Method of preparation :

Peel onions and carrots, cut them into large pieces and fry in olive oil for about 3-4 minutes. Then add the diced tomatoes and stew everything for about 5 minutes.

Cut the peppers into pieces and roast them in a pan or on the grill until semi-finished, then add to the remaining vegetables, stew for another 5 minutes. Pour the chopped parsley and garlic, season with salt and pepper, add the tomato paste and a pinch of sugar. Keep suffocating, stirring constantly.

A few minutes later, pour the broth and cook the soup for about 10 minutes.

All you have to do is beat with a blender to get a thick soup. Add the cream and beat.
