Method of preparation :
Separate the egg whites from the yolks.
Beat the egg whites in the snow with a mixer.
Put the tomato paste, ricotta, onion in a bowl and stir. Add the yolks and finally the tuna. Stir to obtain a uniform consistency and break the fish.
Mix the egg whites in portions, stirring with a spatula so as not to lose their airiness.
Pour into two souffle bowls and bake for 40 minutes at 160 degrees until the souffle rises and becomes golden.
