Required products :

8 large eggs

1/3 tea cup bread crumbs

1 onion

3 cloves garlic or 1/2 teaspoon dry

250 grams of yellow cheese

1 large eggplant

1 sweet red pepper

1 small bunch of parsley

1/2 teaspoon ground cayenne pepper

1 small bunch of coriander

4 cinnamon sticks

1 tablespoon cloves

1 grated nutmeg

1.5 tablespoons allspice beans

olive oil

Method of preparation :

Crush the cinnamon together with the cloves, nutmeg and allspice.

Peel an eggplant and cut it into thin slices. Add salt and leave for 20 minutes. Then rinse and dry.

Finely chop the onion and pepper (clean the tail and seeds).

Heat 2-3 tablespoons of olive oil and fry the eggplant, onion and peppers until low heat (about 20 minutes).

When you remove the vegetable combination from the stove, add the spice mix to it and stir.

Finely chop the garlic and green spices, and the yellow cheese into cubes.

Beat the eggs in a separate bowl, pour the green spices, garlic, cheese and bread crumbs. Stir, add the cayenne pepper, then the vegetables and stir once more.

Grease with oil a suitable form and pour the resulting mixture into it.

You can use one large or several small molds.

Preheat oven to 200 degrees and bake the dish for 40 - 45 minutes.

Check readiness with a toothpick.

When you remove the vegetable temptation, wait for it to cool for about 10 minutes and transfer to a suitable plate, turning it over.

Serve warm or hot with lemon slices.
