Do you like spaghetti bolognese? If the answer is yes, but you have decided for one reason or another to reduce or stop eating meat, you do not need to give up your favorite spaghetti. Prepare them with lentils!

Required products :

  • 10 grams of dried mushrooms
  • 1 onion, finely chopped
  • 1 carrot, chopped
  • 1 small pepper, finely chopped
  • 2 tablespoons olive oil
  • 2 cloves garlic, finely chopped
  • 1 hot red pepper, finely chopped
  • 2 teaspoons oregano
  • 400 grams of brown lentils - boiled
  • 400 grams of fettuccine (or other paste of your choice)
  • parsley for serving
  • parmesan for sprinkling

Method of preparation :

Put the mushrooms in a small bowl and pour 1/2 teaspoon of hot water. Leave to soak for 10 minutes, strain, keeping the water separated, and cut the mushrooms into small pieces.

Cut onions, carrots and peppers in a food processor until they become small, evenly sized pieces.

Heat oil in a pan and fry the vegetables until soft, about 5 minutes. Add garlic, hot pepper, oregano and mushrooms. Cook for 2-3 minutes and add the lentils, tomatoes, the liquid from the soaked mushrooms and wait for the mixture to boil. Reduce heat and simmer for 15-20 minutes until slightly thickened. Season with salt and pepper to taste.

Meanwhile, boil the pasta in salted water according to the instructions on the package.

Drain and add to the sauce.

Stir to combine and garnish with parmesan and parsley.
