How To Cook Warm Potato Salad With Lentils And Pickles - Recipe

Required products :

  • 1 tablespoon Dijon mustard
  • 2 green onion stalks
  • 2 heads of shallots
  • 2 teaspoons capers
  • 500 grams of potatoes
  • 2 finely chopped pickles (or use fresh gherkins)
  • 2 tablespoons dark wine vinegar
  • 1 bay leaf
  • 1/4 tea cup refined olive oil
  • 1/2 cup chopped fresh parsley
  • 4 stalks of fresh thyme
  • 2 cloves garlic
  • 1 teaspoon green lentils

 

Method of preparation :

Wash the lentils, pour 4 tea cups of water over them and put one peeled shallot head, cut in two, bay leaf, thyme and salt to taste. Stew over medium heat for about half an hour (or until the lentils are ready). Meanwhile, boil the potatoes.

 

Finely chop the cucumbers.

 

Do the same with the second onion.

 

Prepare a dressing by mixing vinegar with cucumbers, onions and chopped garlic. Add the mustard, a little salt and pour olive oil. Finally, add the capers and chopped green onion feathers.

 

Drain the liquid from the already prepared lentils.

 

Cut the parsley leaves and all that remains is to combine the products.

 

Cut the boiled and peeled potatoes into large cubes, pour the lentils over them. Pour the sauce over the mixture and sprinkle with parsley.

 

The salad is ready, serve warm.
