How To Cook Wholemeal Pumpkin Bread With Seeds And Onions - Recipe

Necessary products

For the dough:

  • 350 grams of wheat flour extra quality
  • 100 grams of wholemeal flour
  • 1.5 teaspoons fast-acting dry yeast
  • 320 milliliters of warm water
  • 1 tablespoon pumpkin puree
  • 1/2 teaspoon fine sea salt
  • 1.5 tablespoons olive oil


For the stuffing:

  • 2 tablespoons finely chopped onion
  • 150 grams of grated raw pumpkin
  • 2 sprigs of dill
  • 80 grams of mozzarella
  • 100 grams of pumpkin seeds
  • spreading egg (can be replaced with oil)


Method of preparation :

Put the yeast in a bowl, pour warm water and wait for a "foam cap" to form on the surface.

Sift the flour and salt directly on the kitchen counter. Make a dent in the middle and pour in the dissolved yeast and pumpkin puree.

Knead the dough, meanwhile pouring the vegetable fat. If it gets sticky, use more flour.

Shape the dough into a ball, place it in a large deep bowl, cover with cling film and leave to rise for 45 minutes.

Then divide into two parts, which you roll out on an oiled plate. Spread the grated mozzarella and pumpkin, finely chopped onion, dill and pumpkin seeds on their surface.

Fold the dough as shown in the following photos. You will get three layers, between which there is a filling.

 

 

Fold both ends towards the center, the layers are now 9.

 

Turn the "handkerchief" with the seam down, smear with egg or oil, sprinkle with pumpkin seeds and leave for 20 minutes.

 

When this time has elapsed, place the dough in the oven and let it bake at 180 degrees for about 35-40 minutes.
