Scientists make their conclusions based on the consumption of roasted and raw peanuts. They found that fat is broken down more in roasted peanuts. Accordingly, the latter supply more energy and calories .

In the study of peanut cells, it was found that when cooked, the cell walls change and release more fat .

About 50% of the content of peanuts is fat . However, most of them remain undigested by the body when the food is raw. This is due to the peculiarity of the cell walls. Fats are stored in structures that are coated with proteins. They prevent their assimilation.

The study is published in the American Journal of Physical Anthropology .
