Necessary products :

  • 200 grams of bacon 
  • 2 sprigs of celery 1 onion 2 garlic cloves 2 tablespoons butter 4 tablespoons flour 1.5 cups light beer 3 cups chicken broth 
  • 1 cup sour cream 
  • 350 grams of cheddar cheese with salt and ground black pepper to taste

 

Method of preparation:
Cut the bacon into small pieces and fry without fat in a hot pan with a thick bottom. Let them acquire a golden color and remove on paper to drain off excess fat.
Leave in the dish about 2 tablespoons of the fat that has separated from the bacon, discard the rest.
Cut the onion and celery into small cubes, mash the garlic.
Fry the onion and celery until soft (about 5-7 minutes), then add the garlic, and 1-2 minutes later add the butter. When melted, pour in the flour and stir.
After a few minutes, pour in the beer and chicken broth. When the liquid boils, reduce the heat and let the soup boil for 15 minutes.
Reduce heat to low, add cream and cheese. Let it cook until the latter melts. Finally, put the pieces of bacon and serve the soup hot.
