Studies at the University of California, Davis, show that yogurt and dairy products containing live lacto- and bifidobacteria stimulate the production of specific anti-cancer elements that help the immune system prevent cancer cells from growing.
Dairy products retain the nutritional and biological properties of milk itself: high content of complete proteins and fats, vitamin and mineral composition and good absorption. It is because of these qualities that experts consider them to some extent dietary.
The variety of dairy products is explained firstly by the fact that different lactic acid bacteria or yeasts are used for their production and secondly, different milk (pasteurized, warmed, etc.) is used as a raw material. only from cows but also from other animals.
Yogurt and kefir are obtained by the method of mixed fermentation. Bacteria break down milk sugar into lactic acid, and at the same time carbon dioxide, alcohol and volatile acids are formed. On the one hand, this further improves the absorption of these drinks, and on the other - limits their use in children's and dietary nutrition.
Acidophilus results from the fermentation of pasteurized yogurt with acidophilic bacteria taken alone or in a mixture with lactic acid streptococcus. It has antimicrobial activity, weakens and even neutralizes the action of toxins, promotes the absorption of lactose and stabilizes the acid-base balance. Therefore, it is recommended for vomiting, colitis, dysentery and other intestinal diseases.
Some dairy products are high in fat and calories, so if you are prone to being overweight, they should not be consumed too much. But in moderation, they suppress the pathogenic flora, help the body better absorb milk sugar and strengthen the immune system.
Nutritionists recommend regular consumption of dairy products and the application of unloading yogurt 1-2 times a week. The dairy diet includes the consumption of at least 5 types of dairy products 5 times a day. It is recommended to take cottage cheese up to about 600 g per day. In combination you can take 2 cups of tea without sugar or mineral water.
The shelf life of yoghurt products is limited and therefore they must be stored in a refrigerator. If they are offered in stores in places outside the refrigerators, this is an almost certain sign that they contain preservatives, stabilizers and other types of chemical compounds.
