E 221 is a preservative. It is an antioxidant, has a whitening effect, is used as a color stabilizer. It is a white or pink powder with a slight odor and cooling salty taste. The concentrate is easily oxidized in air, dissolves well in water, less in alcohol and does not dissolve in oils and fats at all.

Sodium sulfite is obtained by reacting sodium carbonate solution with sulfur dioxide. E 221 is a by-product of the production of phenol from benzene sulfonic acid. The allowable daily dose is 0.7 mg per kilogram of body weight.

Usage:

The additive is used as a reducing agent, bleach, preservative, refrigerant, antioxidant in the production of a number of products: dried, canned and frozen fruits and vegetables, gelling fruit extracts, liquid pectin, potato and mushroom products, marmalades, jams, low-fat jam with or without sugar and other similar products, soft drinks, beer, gelatin, sweets and confectionery with a large amount of sugar, cephalopods, spices based on lemon juice, salted and dried fish, sausages. E 221 is well used in winemaking: it helps to bind acetaldehyde, which stabilizes the color; contributes to obtaining the necessary oxidizing and reducing potential, which increases the stability of wine at the microbiological level; prevents various bacterial changes in the wine.

Human effects:

Preservative E 221 is not dangerous for the human body, but can cause stomach upset. In addition, there is a risk of asthma attacks, destroys vitamins B1 and E. Its use in children is not recommended.
