Magnesium glutamate is a white or off-white crystalline crystal or powder. It has no characteristic odor, but has a peculiar taste. It dissolves well in water and is insoluble in ethanol. It is obtained by microbiological synthesis.

Use

The food additive E 625 is practically not used in the food industry. It is widely used in pharmacy in the complex treatment of some nervous disorders and mental illnesses. Previously, magnesium glutamate was found in some canned products (canned meat and fish, pâtés, noodles and semi-finished soups).

Impact on humans

The human body takes the substance as a nucleic acid, later it is absorbed and processed. The supplement is not recommended for use by pregnant and lactating women, it is contraindicated for addition to baby foods because it can lead to adverse effects (loss of vision, lethargy, weakness, nausea, upset stomach, palpitations, sweating, tingling in the area of nape, neck and back, spontaneous headache). The standard specifies a maximum daily amount of magnesium glutamate - 120 g per 1 kg of body weight.
