Egg Salad - More Nutrients

Consumption of egg, along with a salad of raw vegetables, increases the absorption of carotenoids.

Consumption of egg, along with vegetables, can improve the absorption of carotenoids , according to a new study.
 
Because eating vegetables is important for health, and many people do not eat enough, scientists explain that combining them with a boiled egg can increase their benefits. In addition, they will benefit from the beneficial qualities of the egg. 
 
A research team from Purdue University in the United States is conducting a study to evaluate the effects of egg consumption on the absorption of carotenoids from raw vegetable salad. 
 
In the study, sixteen healthy men consumed three types of salads. In one there is 1.5 eggs, in the other they are 3, and in the third salad there is no egg. It turns out that those who consume the salad with the largest amount of eggs, the absorption of carotenoids increases by about 3 - 9 times. The salad consists of tomatoes, grated carrots, spinach , lettuce. The cartenoids found in it include beta-carotene, alpha-carotene, lutein and zeaxanthin. The last two are also found in the egg yolk. 
 
 
 
The present study is a continuation of previous ones, from which it is clear that the addition of certain oils to raw vegetables leads to increased absorption of cartenoids . 
 
The researchers believe that these benefits apply to all age groups. The researchers intend to expand the scope of their research by examining the effect of fat-soluble nutrients, including vitamins E and D, on raw vegetables. 
 
The data was presented at the Annual Meeting of American Nutritionists.
