The results of a study conducted by American scientists from the University of Texas show that frequent consumption of meat, especially if it is roasted, correlates with an increased risk of bladder cancer, the BBC reported.
The conclusion about the harm from roasted meat is based on a study that lasted 12 years and covered 1,700 people.
The authors of the study remind that when frying or grilling, when the meat acquires an almost black color, harmful substances begin to be released - polycyclic aromatic hydrocarbons and aldehydes, which are considered carcinogenic contaminants, as well as ultrafine particles, which are toxic to the lungs.
The most dangerous is the frying in margarine, which releases the toxic polycyclic aromatic hydrocarbon naphthalene.
The data collected show that the risk of cancer, and especially bladder cancer, is twice as high in people who consume roasted and fried meat. Red meat is considered the most harmful, but even fried fish or chicken are dangerous to health.
