90% of Bulgarian beer brands contain the important antioxidant glutathione, according to a study conducted by the Independent Laboratory Center for Food Biology and the Institute of Cryobiology and Food Technology in July this year.
Glutathione is a protein found in all living organisms. The human body also synthesizes the substance. Glutathione is considered a major sulfur-containing compound in cells and one of the key antioxidants along with vitamin C. It is found mainly in fruits and vegetables .
It is important because it neutralizes harmful substances absorbed from the environment, such as pesticides, industrial pollutants and bacterial toxins. Participates in the regulation of cellular defense mechanisms, energy balance, synthesis of proteins and nucleic acids, etc. Glutathione is important for the proper functioning of the body. Therefore, one of the main functions of cells is to maintain its optimal amount.
The antioxidant is obtained mainly through nutrition. However , glutathione is lost during heat treatment of products. For this reason, it is essential to consume raw plant products or foods obtained as a result of biological processes - mainly fermentation by microorganisms. Such products are yogurt, cheese, beer, wine, boza and others.
Glutathione plays an important role in the quality of beer - it stabilizes the drink and reduces the levels of oxidative processes. Higher concentrations of glutathione prevent changes in the taste and color of beer, which reflects on its perception.
This protein in beer is about 0.1 - 0.2 mg / l. Its content is highest in "live" beer. It is found mainly in yeast. The amount of glutathione in wines is lower.
