This easy recipe for gluten-free fruit tart can be your secret weapon for the perfect dessert. Summer fruits can be replaced with oranges, grapefruit, tangerines or pineapple in winter or with plums, apples and figs in autumn. Fresh spring provides a wide choice - cherries, apples, pears, strawberries and more. Don't forget the bananas, which are available all year round in almost every store.

Required products :

  • 2 and 1/2 cups oatmeal *
  • 1 and 1/2 cup roasted almonds, unsalted
  • 1/2 cup maple syrup + 3 tablespoons (can be replaced with honey)
  • 1 teaspoon vanilla extract
  • 3/4 teaspoon salt
  • 8 tablespoons chilled butter, cut into cubes
  • 1 large egg
  • 2 cups fresh berries (or other seasonal)
  • 1 cup peaches, cut into slices
  • 1 tablespoon sugar
  • 1 cup cooking cream
  • 1/2 cup low-fat yogurt

* A tea cup is used to measure the quantities.

Method of preparation :

Preheat oven to 180 degrees. Put a sheet of parchment paper in a pan and grease it with coconut oil.

Mix the oats and almonds in a food processor and blend until sandy. Add 1/2 cup of maple syrup, vanilla and salt and spread the butter evenly on top. Blend until the ingredients are well mixed.

Pour the dough onto the paper in the baking tray and knead with wet hands so as to obtain an even loaf. Make holes with a fork over its entire surface, then spread with lightly beaten egg.

Bake for about 25 minutes or until browned. Turn the pan from time to time so that the marshmallow is baked on all sides. Then leave it to cool and carefully transfer it to a cutting board.

Beat the cream and the remaining 3 tablespoons of maple syrup in a large bowl until hard peaks form. Carefully pour the yogurt into the mixture and mix with a rubber spatula in a circular motion.

Just before serving, mix the fruit and sugar in a medium bowl (optional).

Spread the whipped cream on the finished base. Decorate with fruit on top. Cut into 16 pieces and serve.

* People with celiac disease or gluten intolerance should use gluten-free oatmeal, as oatmeal is often contaminated with wheat and barley.
