The sweetness of the almond cake comes from the fruit, not from added sugar. Use ripe pears for more sweetness.

Required products :

for the base:

  • 1/2 cup wholemeal flour
  • 1/2 cup white flour
  • 1/4 teaspoon salt
  • 8 tablespoons cold butter
  • 1 large egg yolk
  • 2 tablespoons cold milk

for cream:

  • 2 dates, finely chopped
  • a pinch of baking soda
  • 3/4 cup pear, peeled and finely chopped
  • 3 tablespoons water
  • 1/2 teaspoon cinnamon powder
  • 1/2 teaspoon ginger powder
  • pinch of salt
  • 2 tablespoons butter, at room temperature
  • 1 tablespoon honey
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 6 tablespoons almond flour
  • 2 tablespoons white flour

for decoration:

  • 2 medium ripe pears, cut into crescents
  • 1 tablespoon honey
  • 1 tablespoon lemon juice
  • 1 large egg white
  • 1/4 cup almonds, chopped

* A tea cup is used to measure the quantities.

Method of preparation :

the basis:

Mix with a wire spoon in a medium bowl the wholemeal flour, 1/2 cup white flour and 1/4 teaspoon salt.

Beat the egg yolk and milk in a small bowl with a wire spoon.

Add the wet ingredients to the dry ones and stir so that they mix well.

Cut the butter into 12 small pieces.

Place the pastry dough on a clean surface and start kneading, adding little by little the pieces of butter. Knead until homogeneous. Then make a ball of dough. Put it in a bowl and wrap with foil. Refrigerate for at least 1 hour, up to a maximum of 4 days.

cream:

Mix the soda and dates in a small bowl. Add hot water to cover them. Soak for 15 minutes, then drain. Mash the dates with a fork until a smooth paste, which you combine with the finely chopped pear, water, cinnamon, ginger and salt in a small saucepan. Cook over medium heat and stir frequently until the fruit is soft and the liquid has evaporated. Remove from the heat and allow to cool.

Mix in a bowl until homogeneous 2 tablespoons butter and 1 tablespoon honey. Add the eggs and vanilla and beat with a mixer. Add the almond and white flour and beat until smooth. Add the cooled fruit mixture and beat again until smooth.

assembly:

Place a sheet of parchment paper on a baking tray and sprinkle with flour both the tray and the dough.

Roll out the dough on the paper in the shape of a circle. Spread the almond cream evenly on the circle, not putting the cream at a distance of 2 fingers from the edges of the dough.

Mix the chopped pears, honey and lemon juice in a medium bowl. Do not use the liquid left over from the fruit. Decorate only with the pears on the cream of the cake. Fold the dough so that the edges close.

Place the cake on baking paper in a large pan and refrigerate for at least 1 hour to 1 day if you are not going to bake it right away.

baking the cake:

Preheat oven to 180 degrees. Spread the cake with egg white and sprinkle with almonds. Bake for 45 to 50 minutes or until 
golden brown. Cool for 20 minutes before slicing and serving.
