Required products :

4 eggs
100 grams sugar
2 tablespoons vanilla sugar
1 teaspoon grated lemon peel
100 grams flour
3 tablespoons cornstarch
1 teaspoon baking powder

For the cream:
500 milliliters of fresh milk
170 grams of sugar
2 sticks of vanilla or vanilla sugar
40 grams of ground almonds
5 yolks
20 grams of egg custard powder
20 grams of gelatin
500 grams of whipped cream

To decorate:
300 milliliters of whole cream
10 g gelatin
3 drops almond essence
1 teaspoon powdered sugar
2 pieces of ripe kiwi
5 strawberries
2 ripe peaches
grapes
200 g roasted almond petals
1 pack coating for fruits

Preparation :
Preheat oven to 180 degrees.

The dough.
Divide the eggs into yolks and whites. Mix the yolks with the sugar (including vanilla) and lemon zest, beat until fluffy. Beat the egg whites until stiff peaks form and join the two pieces. Add the flour sifted with starch and baking powder, mix to make the dough uniform.
Bake the marshmallows in a suitable detachable form for about 30 minutes, check the readiness with a toothpick. Remove to cool on a wire rack.
When cool, cut horizontally into two or three pieces using a sharp knife and thread.

Cream.
Put 400 milliliters of milk on the stove. When it boils, add the vanilla and 100 grams of sugar. Mix the yolks with the remaining milk and sugar, add the ground almonds and cream powder. Then carefully pour this mixture into the hot milk and boil a thick cream, stirring constantly.
Pour gelatin with cold water and heat over low heat to dissolve completely, then add to the cream.

Beat the chilled cream until "hard peaks" and mix it with the cream, which should be at room temperature. Stir until smooth. Separate 2 tablespoons in a bowl and distribute the remaining amount between the tops, assembling the cake. Put in the fridge and start with the second cream for decoration.

The decoration.
Add the drops of almond essence to the cream you separated earlier and mix thoroughly. Pour gelatin with cold water, then dissolve over low heat and add 2 tablespoons of cream.

Beat the remaining cream with the powdered sugar and mix with the cream you have already prepared and the cooled gelatin. Put the cream in the refrigerator for 15 minutes, and when you take it out, cover the cake with it. Spread the sides, which are then sprinkled with roasted almond leaves.
Put the dessert in the refrigerator and start preparing the fruit.

The fruits .
Wash the fruit, remove unnecessary parts (stones, tails, seeds, etc.), if necessary, peel.
Cut the kiwi into pieces, the strawberries into two lengthwise, and you can leave the grapes whole. Decorate the cooled cake with the fruit.
Prepare the glaze according to the instructions on the package and pour the dessert. Return to the refrigerator, this time for 2 hours.
