Required products :

For syrup :

  • 215 grams of powdered sugar
  • 375 milliliters of water
  • 8 green cardamom pods
  • 375 milliliters of dessert wine
  • 6 small peaches

For garnish:

  • powdered sugar
  • whipped cream

Method of preparation :

  • Preheat oven to 180 degrees.
  • Grease the bottom and walls of a square baking dish measuring 20 cm with melted butter. Cover with baking paper.
  • In a medium bowl, mix the almond flour with the powdered sugar.
  • In another bowl, beat the eggs with the brandy.
  • Add the melted butter and stir briefly.
  • Transfer the mixture to the bowl with the dry ingredients and mix with a wooden spoon or spatula until homogeneous.
  • Pour the cake batter into the form and sprinkle with the sliced ​​almonds.
  • Bake for about 35-40 minutes or until the toothpick comes out clean from the center of the cake.
  • Meanwhile, prepare the syrup by mixing the sugar with the water and cardamom in a saucepan over medium heat.

  • Let the syrup simmer for 2 minutes without stirring.
  • Add the wine and cook for another 2 minutes until slightly thickened.
  • Add the peaches and simmer in the syrup for about 5 minutes, then remove to cool.
  • Peel a squash, grate it and slice it. Return them to the syrup.
  • Sprinkle the cake with powdered sugar and cut it after it has cooled slightly.
  • Garnish with peaches, whipped cream and syrup and serve.
