Required products :

60 grams of roasted almonds

pinch of sea salt

4 tablespoons semolina

1 tablespoon butter

750 milliliters of vegetable broth (maybe meat)

3 egg yolks

125 milliliters of high-fat liquid cream (about 30%)

black pepper and salt to taste

Method of preparation :

Pour hot water over the almonds for 10 minutes and peel them when they swell. Dry them, bake lightly without fat on low heat and then crush (or grind). Pour them into a fireproof dish, add coarse salt and heat, stirring constantly. Pour the semolina and stir constantly, otherwise the mixture will burn quickly. It's time for the butter, when it melts, pour the broth gradually.
