Almond paste is the key to making delicious homemade marzipan, and because it is difficult to find and expensive in stores, you can make it yourself at home. This is how.

Required products :

  • 1 1/2 teaspoons almonds - peeled
  • 1 1/2 teaspoons powdered sugar - sifted
  • 1 protein - at room temperature, slightly broken
  • 1/2 teaspoon almond extract if desired

Method of preparation :

Grind the almonds together with some of the powdered sugar in a food processor. When the nuts are completely finely ground, then add the remaining sugar.

Add the protein and extract (if using) and continue to grind in the robot until a ball begins to form. If necessary, add a little powdered sugar if the mixture seems liquid.

Form into a ball and with the help of foil make the desired shape of the almond paste. Store in a tightly closed zippered bag in the refrigerator.

Before use, remove the almond paste from the refrigerator and allow to reach room temperature.
