How To Cook Anchovies With Oven Rice - Recipe

Necessary products:

  • 1 kg of anchovies
  • 2 tea cups long grain rice
  • 4 tablespoons olive oil
  • 2 tablespoons butter
  • 1 head of old onion
  • 1 bunch green onions
  • 1 tomato
  • 3 tablespoons raisins
  • 3 tablespoons pine nuts
  • 1 cup chopped fresh parsley
  • salt and ground black pepper to taste
  • 1/4 teaspoon cumin if desired

 

Method of preparation:

 

First, peel the tomatoes as shown in the photos and form roses from the peel.

Cut the inside into small pieces.

Heat olive oil in a pan and fry the chopped onion (both old and green) until soft.

Then add the butter and stir when melted.

It's time for the tomatoes, stir again.

Followed by rice and stirring, of course. Let the products simmer for a few minutes and add the spices.

Finally, add the raisins, pine nuts, stir and pour 1.5 teaspoons of water.

Allow the products to cook over medium heat until the rice absorbs all the water.

Then pour the chopped parsley, stir and remove the pan from the heat. The filling should cool a little.

Take care of the anchovies. Clean it, remove the heads and spine, divide each fish into two parts. Then arrange on the walls and bottom of a suitable round dish, as shown in the photos.

In the middle, pour the rice filling, which you close with the pieces of fish that you placed on the walls of the pan.

Arrange a few more fish on top, they will give a finished look to the beautiful composition.

Coat the surface with olive oil and put the tomato roses in the middle.

Bake the dish in a preheated oven at 180-200 degrees for about 30 minutes.
