Necessary products:

  • 3 medium-sized apples, finely chopped
  • 1 teaspoon boiling water
  • 200 grams of dates, chopped
  • 50 grams of butter (or coconut oil) + for spreading
  • 2/3 tea cup brown sugar
  • 2-3 teaspoons of cinnamon
  • 1 egg
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 2 tea cups flour (white, wholemeal or blend)

Method of preparation:

Preheat oven to 180 degrees. Grease the cupcake tins with butter (or coconut oil).

Put the sliced ​​apples and dates in a bowl and add the boiling water, butter and brown sugar. Stir until the butter melts and the sugar dissolves.

When the fruit mixture is no longer hot but warm, add the cinnamon and egg and mix well.

Add baking soda, baking powder and flour and mix until smooth. If the mixture is too dry, add a little milk.

Pour the resulting mixture into the cupcake tins and leave to rise until slightly increased in size, then bake for 15 minutes or until golden brown. Serve.

You can make it with blueberry jam or use oatmeal instead of flour.
